I had an interesting session with a kinesiologist last week and and her diagnosis is a possible an intolerance to wheat. I say possible, because I seriously don’t want to have an intolerance to wheat. I love bread too much, buying bread, baking bread and most of all eating bread…perhaps what she meant to say was eat wheat in moderation…yes that’s it…in moderation, that’s what I have decided to take from this session. So I complain to my friend Anlin Zanoli about this wheat issue and she shared an awesome idea with me. I admit when she mentioned it, I was a bit sceptical, but once I tried it, I was hooked. I asked where she got the idea from and in Anlin’s words, “I don’t like cold cheese on rice cakes, so thought the microwave hasn’t killed me yet..”

I’m calling this Anlin’s Pizza Surprise. You can add whatever topping you want, but the idea is to keep it really simple. So here is your really simple, but delicious lunch idea. It is so easy for the office too.
3 corn thins or rice cakes (whatever brand or flavour you like)
40g grated cheddar
1 medium-sized tomato cut into thick slices – I like jam tomatoes, but you can use whatever you like
Freshly ground black pepper
Salt – I generally use vegetable salt
So I am being really specific with quantities because those constitute a starch, protein, fat and about half a veg
portion. You could add a bit more cheese if you are using a kilojoule-controlled or low-fat variety – so there I am taking a super fun idea and trying to convert it into a healthy meal. Isn’t it great though, knowing you can eat something delicious and say that it was a healthy meal? If you are not watching your portions, feel free to load on the cheese…Yum!!!
So all you do is place your corn thins on your plate flavoured side on top (if flavoured) of course. Place slices of tomato over – make sure you cover the entire surface. Sprinkle with salt and pepper to taste. The final layer is your grated or sliced cheese (whichever is easier for you) and microwave on high until the cheese melts – the time really depends on your microwave. I find I need a minute in my microwave. Next step – eat!!! That’s it – a super fun, delicious pizza and healthy too!!!
You can add about 30g feta cheese over the tomatoes for an even cheesier treat – that’s about another protein portion though.
